The people bustling past outside are amusing to watch. Someone tries to step into the street, changes their mind, and leaves their sandal on the road. Ooops.
My eggs come. The bread is buttered (always forget to ask them not to do that), the eggs are perfectly poached (so the yolk can seep into the toast) and poured on top is a runny light green mixture.
Not really what I would call pesto, far too much liquid for that. But here it goes…
Oh, wow, this is soooo good.
The ‘pesto’ is really a cream sauce with spinach flecks. Kind of like hollandaise with the echo of lemon and that strange rough feeling that sticks on the teeth. There is a lot of garlic.
Hard to taste the spinach, though since it doesn’t taste at all like basil the green has to be something. It’s the cream, lemon and garlic that make this sauce: the spinach is just for looks.
It goes amazingly well with the eggs and bread, the strong richness dominating every bite. It soaks into the crust, runs around on the plate, mixes in with the yellow yolks.
A poster advertising The Biggest Loser stares at me disapprovingly from outside. I feel slightly guilty. Then I take another bite and the sauce makes it all better.
