Ah, the joys of having my husband home again! Tonight I don’t have to wash up, I don’t have to wish myself good night… and the delicious smell of pizza is wafting past my nose.
The good life.
Trying a new recipe tonight. A pizza with no tomato sauce, just parmesan, thinly sliced potato, garlic and rosemary.
The smell of roasting rosemary joins the general bakery smell. My stomach gurgles. Soon, my pretty, soon…
The Husband pulls the pizza out of the oven, and it’s beautiful. There’s something to be said about simplicity when it comes to pizza toppings. I normally fit as many things as I can on and it looks a crazy, colourful mess… this is a yellow-cream stream-lined modern interpretation of pizza.
The base is completely flat, a pre-frozen large. The chef has left a two centimetre ring of ingredient-free crust and it’s now a light golden. The circles of potato and white and curled brown, the parmesan is tanned orange. Rosemary leaves are scattered in pine green dashes. Where is the food papparazzi when you need them?
Sawing at the crust to split the pizza into quarters. Perhaps I should do the girly thing and offer to eat less than half… but it looks so gorgeous and I’m hungry.
Picking up my first slice. The base is firm and straight as a board. Biting.
The base is crisp-to-tough, requiring more molar action than average. The parmesan is salty and tangy, easy to bite without the stretchiness of mozzarella. The potato is not very noticable, perfectly cooked and fading into the background of the potent, pungent rosemary. Its resinous pine flavour is the main taste of the pizza and its strong clarity plays off the oiliness of the cheese.
It’s delicious. I eat and eat and feel full and chew and chew…
My jaw is sore but I’m so glad I didn’t volunteer any of my half. And I’m so glad my husband is home.
